Recipe: Stir-Fried Tom Yum Shrimp with Oat Fiber Noodles

Ingredients
- 1 pack of Moki oat fiber noodles
- 5-6 fresh shrimp
- 1 stalk of lemongrass, sliced
- 2 teaspoons chopped galangal
- 3 kaffir lime leaves, chopped
- 2 red birds eye chilies, chopped
- 2 tablespoons evaporated milk
- 1 1/2 tablespoons Thai chili paste (nam prik pao)
- 2 teaspoons fish sauce
- 1 1/2 tablespoons lime juice
- 1/4 cup broth
- 1 tablespoon vegetable oil
- Coriander for garnish
Instructions
- Rinse the Moki oat noodles in water 1-2 times and drain well.
- Heat a pan with vegetable oil and broth until boiling. Add the sliced lemongrass, chopped galangal, and chopped kaffir lime leaves. Stir until fragrant.
- Add evaporated milk and Thai chili paste, seasoning with fish sauce, and stir to combine.
- Add the fresh shrimp and cook until done. Remove the shrimp from the pan.
- Add the oat noodles and toss to coat in the sauce. Add lime juice and chopped chilies, stirring well.
- Serve on a plate, place the cooked shrimp on top, and garnish with coriander for a beautiful finish.
